Working with Rob Reilly and Adam Powers, we needed to create a label that captured the spirit of the State Fair. The Innovation Brewery there in Milwaukee came up with a recipe that incorporated two ingredients that transcended the fair experience: Cream Puffs and Strawberries..
A wild yeast strain was used to develop a tart style lager, that boasted the sweetness of the strawberries, mixed with lactose in the brewing process to offer up a creamier viscosity. The Strawberry Cream Puff Tart was a huge success both at the fair and on-premise in the tap room.
